Why avocado oil? Avocado oil keeps the fat liquid and squeezable at room temperature. Without it, tallow and lard would be solid blocks. It also raises the smoke point and adds a neutral flavor profile.

Does it taste like avocado? No. Refined avocado oil is tasteless and odorless. You taste the animal fat — beefy, buttery, or rich depending on the SKU.

What is the smoke point? Beef Tallow: ~400°F. Pork Lard: ~370°F. Ghee: ~450°F.
