Beef Tallow
Flat-Top Smashburgers
Restaurant-level crust at home. The tallow is what makes the edges shatter-crisp.
You'll need
- 1 lb ground beef (80/20), loose balls
- GILD Beef Tallow
- Salt & pepper
- American cheese, soft buns
- Onion, thinly sliced (optional)
Method
- Get a flat top or cast-iron screaming hot. Squeeze on a thin layer of GILD Beef Tallow.
- Drop loose beef balls, smash thin with a press, season hard.
- Sear undisturbed until a deep brown crust forms, then flip.
- Cheese on, melt, stack on a buttered (squeezed!) toasted bun.
